PORTOBELLO PROTEIN SOUP (Winter Healing Guide)
Ingredients:
2 large portobello mushrooms, sliced 1⁄2 cup cooked adzuki beans
2 cups spinach
1 leek, chopped 4 cups broth or water Sea salt and pepper
Instructions:
Sauté leek and mushrooms until soft. Add broth and adzuki beans, simmer 10 minutes. Add spinach at the end and cook until wilted. Season and serve.
